3. Zucchini
Zucchini, or courgettes as the French call them, are another delicious low carbohydrate vegetable. Whether you use the green or yellow varieties, they are a healthy alternative to more starchy pumpkin and squashes. Zucchini are low in calories but high vitamins, minerals, antioxidants and flavonoids. They are very versatile – try them with mushrooms, onion and tomato to make a delicious, healthy pasta topping. Alternatively, finely slice them lengthways and use them instead of the pasta itself. Grated they make a good alternative to potatoes in hash browns. They are great in salads and finely pulverized in a blender, they can be used to substitute some of the flour in pancake and other mixes.
