Cauliflower isn’t called the ‘skinny starch’ for nothing. In addition to being low in carbohydrates and calories, cauliflower is a great source of vitamins, minerals and dietary fibre, as well as cancer busting cruciferous compounds. Cauliflower can be used in a wide variety of dishes. It absorbs flavors very well, making it an excellent substitute for potatoes in casseroles, curries, stews and as an alternative to mashed potato. Try slicing it finely and using it instead of macaroni with cheese, or pulverizing it in a blender and using it instead of rice and couscous.
