Much more than a just weed that grows in your lawn, dandelions contain a host of health benefits. Apart from being a good source of Vitamin K, dandelions contain many vitamins, especially the B vitamins. They also contain the minerals calcium, iron, magnesium, zinc, selenium, manganese, phosphorous and potassium. The leaves can be used in salads or juiced. They can also be cooked and added to soups. For maximum nutritional benefit lightly steam them. They can also be dreid and used to make dandelion tea. Apart from using them as a food, dandelions are used as a diuretic, a laxative, a tonic, a liver cleanser and for treating burns and insect stings.
