3. Swiss Chard
Swiss chard is another salad vegetable that is high in Vitamin K. It’s easily distinguished from spinach by its vibrant red and purple colours in the stems of the leaves. These contain an impressive array of phytonutrients, anti-oxidant and anti-inflammatory. Swiss chard is high in vitamins, particularly Vitamins A and C, both good anti-oxidants, and the B vitamins. It is high in flavonoids (water soluble anti-oxidants) like luteine and zeaxanthin, both essential for eye health. Swiss chard also has an impressive array of minerals, including copper, calcium, sodium, potassium, iron, manganese and phosphorous. It could quite honestly be called a ‘super-food’.
